Sweet Yeasted Rhubarb Rolls Recipe

You need to be patient while making sweet rolls. The yeast needs time to do its magic with the dough.

Rhubarb doesn't really take much time to cook, and you don't need to puree it, you just keep stirring and it eventually acquires a smooth, jam-like consistency.

Ingredients for Rhubarb Rolls – For the dough: – 3/4 cup whole milk – 4 tablespoons unsalted butter, cubed – 2 1/4 tsp instant yeast (1 packet); Can also use active dry yeast – 2 tablespoons granulated sugar – 1 large egg – 3/4 tsp salt – 3 1/4 cups all purpose flour – For the Rhubarb Filling: – 3 cups shredded rhubarb (about 1/2 inch pieces) – 1/2 cup granulated sugar – 2 tbsp lemon juice – 2 tsp cornstarch – For assembly: – 1 large egg beaten – 1 tablespoon water or milk – For the glaze: – 2 tablespoons rhubarb filling (from top) – 1 cup powdered (confectioner's) sugar – 1-2 tbsp lemon juice (as needed)

Servings - 12 Rolls, Preparation Time - 1 hour, Cooking Time - 45 mins, Type - Rolls.

These rhubarb rolls will keep covered in the fridge for a few days. To serve, simply reheat individually in the microwave for 20-30 seconds.

You can also freeze the baked and glazed rolls in an airtight container. Then defrost the can overnight in the fridge or on the counter for a few hours before reheating and serving
