These Strawberry Crumble Bars are simple to make, very few ingredients, yet taste like a super fancy special K bar all wrapped up in one.
It consists of chopped strawberries mixed with lemon zest, a little sugar, and cornstarch, allowing their flavor to shine through.
Ingredients for Strawberry Crumble Bars – For the Crust and Crumble: – 1 cup old fashioned oats – 3/4 cup flour – 1/2 cup brown sugar, packaged – 1/2 tsp salt – 6 tablespoons unsalted butter, melted – 1/2 tsp vanilla extract
To fill: – 2 cups finely chopped strawberries – 2 tablespoons sugar – juice of one lemon (about 1 Tbsp, and you'll use the juice for the glaze) – 2 tsp cornstarch – For the glaze: – 1/2 cup powdered sugar – 1 tbsp lemon juice (from the lemon you boiled above)
Servings - 16, Prep time - 30 mins, Cooking time - 35 mins, Type - Bars.
Bars will keep for up to 5 days, covered, in the fridge. Reheat in the microwave before serving, or serve cold, whichever you prefer.
However, these bars go well with yogurt in the morning, or with vanilla ice cream for dessert.
