These s'mores cookies combine crushed graham crackers, marshmallows, and chopped chocolate in an easy, no-chill cookie dough.
They're quick and easy, ready in 30 minutes without a mixer, and they're perfectly chewy and soft.
You can use regular-size marshmallows cut into quarters for these s'mores cookies, or you can use mini marshmallows for less work
Ingredients for S'Mores Cookies – cup unsalted butter (113 grams) – cup packed brown sugar (100 grams) – cup granulated sugar (50 grams) – 1 large egg cold or room temperature, both are fine – 1 tsp vanilla extract – tsp baking soda – tsp salt – 1 1/2 cups all-purpose flour (188 grams) - see note below on how to measure flour accurately without a scale – cup chopped chocolate (43 g) more if desired – 2 or 3 sheets crushed graham crackers (32-47 grams) – 10 marshmallows, quartered (118 g) can also use 40 mini marshmallows – coarse or flaky sea salt, for sprinkling (optional)

You can freeze baked cookies by wrapping them well in plastic wrap and placing them in a freezer-safe bag for up to a month.
