Just 1 brown banana yields 6 tall bakery-style banana muffins in this simple recipe. You can put chocolate chips on top of them

Ingredients for Small Batch One Banana Muffins – 1 cup (125 grams) all purpose flour – 1/2 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp cinnamon – 1/4 tsp salt – 1/4 cup (56 grams) unsalted butter, melted (4 tablespoons; can substitute with a neutral oil) – 1 ripe banana (equals to about 1/2 cup mashed banana) – 1/3 cup (66 grams) brown sugar, packaged – 1 large egg – 1/2 tsp vanilla extract – 1/2 cup (85 g) dark or semi-sweet chocolate chips (optional) – 1 Tbsp (12 g) turbinado or granulated sugar (optional, for sprinkling on top)

Let the batter rest at room temperature for 15-20 minutes before scooping, baking. This thickens the batter and allows the baking powder to activate

Use only every other muffin cup (see photo below) - that is, for 6 muffins, you'll use a 12-cup muffin pan

Bake at 425 degrees Fahrenheit for 5 minutes, then reduce oven temperature to 350 degrees Fahrenheit without opening the door

Then bake for 12-15 minutes. The initial blast of high heat activates the chemical leavening reaction in the muffins
