Ingredients for Turkey Pot Pie – 1 pie crust (1/2 of the perfect pie crust recipe) – 1/2 stick butter – 1/2 c. finely chopped onion – 1/2 c. finely chopped carrots – 1/2 c. finely chopped celery – 2 c. leftover turkey, light and dark, sliced or shredded – 1/4 c. Flour – 2 3 cups low sodium chicken or turkey broth – splash of white wine (optional) – 3/4 c. heavy cream – frozen peas (optional) – fresh thyme, chopped – salt and pepper to taste
How to Cook Turkey Pot Pie? – Melt butter in a skillet or Dutch oven. Add onion, carrot, and celery and cook for a few minutes. – Sprinkle the flour over the mixture and mix, stirring constantly. Pour in the chicken or turkey broth and pour in the cream. – Bring to a slow boil and let the mixture cook for a few minutes and let it thicken. Add fresh or dried oregano to taste, salt and pepper to taste. – Place the crust on top of the pot pie mixture, and press the crust into the sides of the dish. Cut vents on top of crust. – Bake for 30-40 minutes or until very golden and bubbly
