Fig Coffee Cake

Weekday morning coffee, the perfect cake to eat with friends, this fig coffee cake with fresh figs, and yogurt is both light and deeply flavored.

Once the cake has spent about an hour in the oven, allow it to cool for a few minutes before removing the sides of the springform pan.

Garnish with additional fresh figs if you wish, and drizzle some honey on top. Then serve it with yogurt, more honey and lots of coffee.

Ingredients for Fig Coffee Cake – 1/2 cup unsalted butter softened (1 stick) at room temperature – 3/4 cup granulated sugar – 2 large eggs – 1 tsp vanilla extract – 1/2 cup Greek yogurt – 1 1/3 cups all purpose flour – 1 tsp baking powder – 1/2 tsp baking soda – 1/2 tsp salt – 1 pound fresh figs, quartered – 1 tablespoon granulated sugar (for sprinkling on top)

The cake can be kept tightly wrapped at room temperature for up to a day.

It will keep in the fridge for 5 days. It seems to be best served at room temperature.
