Deeply Chocolate Salted Brownie Cookies

When melting the chocolate, be sure to do it slowly so you don't burn it. It's best to do this in the microwave in small sips, stirring occasionally.

It is perfect to use a flaky sea salt in this and it impresses everyone in terms of taste. All you need is a small sprinkle.

Ingredients for Salted Brownie Cookies – 8 oz dark chocolate, chopped (227 g; see Note) – 2 tablespoons unsalted butter (28 grams) – 3/4 cup granulated sugar (150 grams) – 1 tsp vanilla extract – 1/4 tsp fine salt – 2 large eggs – 1/4 cup all purpose flour (33 grams) – 1/2 tsp baking powder – 1/2 cup chocolate chips (85 grams) – flaky sea salt, for sprinkling

For chocolate, use dark chocolate bars that contain at least 50% or more cocoa solids, up to 70%.

It's best to use Trader Joe's Pound Plus Dark Chocolate, which has 54% cocoa solids.

The cookies will keep tightly covered at room temperature for up to 5 days, although it seems likely that they will last longer.
