Crunchy, Vegan Salted Maple Pecan Granola

Ingredients for Salted Maple Pecan Granola – 1/2 cup (100 grams) olive oil (or melted coconut oil) – 1/2 cup (156 grams) pure maple syrup – 1/2 tsp vanilla extract – 1 tsp cinnamon – 1 tsp salt – 3 cups (288 grams) rolled oats – 1 cup (114 grams) pecans (chopped or halved, your choice) – 1/2 cup (42 grams) unsweetened shredded or flaked coconut

Servings - 8-10, Prep Time - 10 mins, Cooking Time - 50 mins, Type - Granola

If you want a smaller batch granola, halve the entire recipe. Adjust the baking time to 10 minutes.

Cook, stirring, 10 minutes, then 2 to 3 minutes or until toasted to your liking. Again, watch carefully. Pecans can go from toast to burn very quickly.

Let the granola cool completely in the pan before placing it in an airtight container, then store at room temperature for up to 2 weeks.
