Soft and Spicy Carrot Cake Cookies with Cream Cheese Frosting have all the flavors of carrot cake

These carrot cake cookies would fit perfectly at Easter brunch or dinner, but they're really appropriate at any gathering, any time of year

It is good to garnish it with extra grated carrots and some chopped walnuts to give it a classic carrot cake look.

You can leave them completely plain or just dust them with some cinnamon, if that's your thing.

Ingredients for Carrot Cake Cookies – For Cookies: – 1 1/4 cups flour (measured by the spoon and level method) – 1/2 tsp baking soda – 1/4 tsp salt – 1 tsp cinnamon – 1/4 tsp nutmeg – a pinch of ground ginger – 1/2 cup unsalted butter softened at room temperature – 1/3 cup granulated sugar – 1/3 cup packed brown sugar – 1 large egg room temperature preferably – 1 tsp vanilla extract – About 1 large carrot to 1 cup finely grated carrots

For the Cream Cheese Frosting: – 4 oz cold cream cheese – 1/4 cup unsalted butter softened at room temperature – 1 cup powdered sugar – 1/2 tsp vanilla extract – pinch of salt – Additional grated carrots and chopped walnuts, for garnishing (optional)

It's a good idea to grate the carrots by hand using a box grater to grate them as finely as possible.
